Ingredients
3 cups shredded rotisserie chicken 4 cups mixed greens (romaine, cabbage, or spinach) 1 cup shredded carrots 1 red bell pepper, thinly sliced 1/2 cup sliced cucumbers 1/3 cup chopped scallions 1/4 cup chopped cilantro 1/2 cup crispy wonton strips 2 tablespoons sesame seeds (optional) **Sesame-Ginger Dressing:** 1/4 cup rice vinegar 2 tablespoons soy sauce 2 tablespoons sesame oil 1 tablespoon honey 1 tablespoon grated fresh ginger 1 clove garlic, minced 1 tablespoon olive oil Salt and pepper to taste
Instructions
In a large bowl, combine mixed greens, carrots, bell pepper, cucumbers, scallions, and cilantro. Add shredded rotisserie chicken and toss gently. In a separate bowl, whisk together all dressing ingredients until smooth. Pour the dressing over the salad and toss to coat evenly. Top with crispy wonton strips and sesame seeds. Serve immediately for best crunch.
Notes
