Description
This Crock Pot Beef Stroganoff is a comforting dish featuring tender chunks of beef simmered in a creamy mushroom sauce, perfect served over egg noodles.
Ingredients
2 lbs stewing beef chunks
2 tablespoons cornstarch
2 cups beef broth
1 tablespoon minced garlic
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
½ teaspoon salt
½ teaspoon pepper
1 medium yellow onion sliced
8 oz white mushrooms sliced
8 oz egg noodles
10.5 oz condensed cream of mushroom soup
1 cup sour cream
fresh chopped parsley (optional)
Instructions
- In a large bowl, toss the stewing beef with cornstarch until evenly coated.
- Place the beef in the crock pot and add beef broth, minced garlic, Dijon mustard, Worcestershire sauce, salt, pepper, onion, and mushrooms. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, cook the egg noodles according to the package instructions and drain.
- Once the beef is tender, stir in the cream of mushroom soup and sour cream until well blended.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley, if desired.
Notes
This recipe can be made a day ahead; simply reheat before serving. Adjust the seasoning to your taste for added flavor.
