  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup vinegar
  • 1/4 cup soy sauce
  • 1 bell pepper, diced
  • 1 can (8 oz) pineapple chunks, drained
  • 1 tablespoon cornstarch

  • Instructions

  • In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Mix gently.
  • Shape about a tablespoon of the mixture into small balls and place them on a tray.
  • Optionally brown the meatballs in a skillet for 5 minutes for extra flavor.
  • In a separate bowl, whisk together the pineapple juice, brown sugar, vinegar, soy sauce, and cornstarch.
  • Place the meatballs into the crock pot, add bell pepper and pineapple chunks, and pour the sauce over everything.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
