1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup vinegar
1/4 cup soy sauce
1 bell pepper, diced
1 can (8 oz) pineapple chunks, drained
1 tablespoon cornstarch
In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Mix gently.
Shape about a tablespoon of the mixture into small balls and place them on a tray.
Optionally brown the meatballs in a skillet for 5 minutes for extra flavor.
In a separate bowl, whisk together the pineapple juice, brown sugar, vinegar, soy sauce, and cornstarch.
Place the meatballs into the crock pot, add bell pepper and pineapple chunks, and pour the sauce over everything.
Cook on low for 6-8 hours or on high for 3-4 hours.
