2 lbs of beef chuck roast, cut into 1-inch cubes
4 medium potatoes, diced (about 1.5 lbs)
3 carrots, sliced
1 onion, chopped
3 cloves of garlic, minced
4 cups of beef broth
1 cup of red wine
2–3 sprigs of fresh thyme
1 bay leaf
Salt and pepper to taste
1 tablespoon of Worcestershire sauce
2 tablespoons of olive oil
1 cup of frozen peas
Optional: cornstarch to thicken, if desired
Brown the beef in olive oil over medium-high heat and season with salt and pepper.
Transfer the browned beef to the crockpot and scrape any browned bits from the skillet into the pot.
Add potatoes, carrots, onion, and garlic on top of the beef.
Pour in beef broth, red wine, Worcestershire sauce, thyme, bay leaf, and more salt and pepper.
Cover and cook on low for 8 hours or high for 4 hours.
Stir in frozen peas 30 minutes before serving.
If desired, thicken with a cornstarch slurry before serving.
