  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 can (15 oz) of diced tomatoes (with juice)
  • 1 cup of corn (frozen or canned)
  • 1 cup of buffalo wing sauce
  • 2 tablespoons of chili powder
  • 1 tablespoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper, to taste
  • Chopped green onions, for garnish
  • Creamy ranch or blue cheese dressing, for topping (optional)

  • Instructions

  • Start by placing the chicken breasts at the bottom of the crockpot.
  • Add in the diced onion, minced garlic, kidney beans, black beans, diced tomatoes, and corn. Stir everything together gently.
  • Pour the buffalo wing sauce over the top, and sprinkle with chili powder, cumin, paprika, salt, and pepper.
  • Cover the crockpot with the lid and set it to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, shred the chicken right in the crockpot using two forks.
  • Once it's ready, serve it up hot and steamy in bowls with your choice of toppings.
