Ingredients
Scale
- 2 cups shredded cooked chicken (rotisserie works great!)
- 8 oz cream cheese, softened
- 1 cup ranch dressing
- 1/2 cup buffalo sauce (adjust to your spice preference)
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup shredded mozzarella cheese
- Optional: Chopped green onions or parsley for garnish
Instructions
- Prepare the Dip Mixture:
- In a medium bowl, combine the shredded chicken, cream cheese, ranch dressing, buffalo sauce, 1 cup of cheddar cheese, and mozzarella cheese. Mix until well combined.
- Transfer to Crockpot:
- Grease the inside of your crockpot lightly with cooking spray. Pour the dip mixture into the crockpot and spread evenly.
- Cook the Dip:
- Cover and cook on low for 2-3 hours, stirring occasionally, until the dip is hot and bubbly.
- Add Final Touches:
- Sprinkle the remaining 1/2 cup of cheddar cheese on top during the last 15 minutes of cooking, allowing it to melt.
- Serve and Enjoy:
- Garnish with chopped green onions or parsley, if desired. Serve warm with tortilla chips, crackers, or sliced veggies like celery and carrots.
Notes
- For extra heat, add a few dashes of hot sauce or increase the buffalo sauce.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or crockpot.
- To make it lighter, use low-fat cream cheese and ranch dressing.
