Ingredients

1 lb boneless
skinless chicken breasts
6 cups chicken broth
2 carrots
sliced
2 celery stalks
sliced
1 onion
diced
2 garlic cloves
minced
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper
to taste
2 cups egg noodles
Fresh parsley for garnish
Instructions
- Place the chicken breasts in the crockpot.
- Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper to the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and return it to the soup.
- Stir in the egg noodles and let them cook for an additional 15 minutes.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, use homemade chicken broth if possible.
