This CrockPot Chicken Tortellini is a creamy and hearty dish that combines tender chicken, delicious cheese tortellini, and fresh spinach, all simmered together in a flavorful marinara sauce.
Ingredients
Olive oil spray
1 ½ lb chicken breast about 4 medium breasts
2 cups marinara sauce
1 teaspoon garlic powder
1 teaspoon onion granules
1 teaspoon Italian seasoning mix
½ teaspoon paprika
¼ teaspoon red chili flakes
1 ½ cups chicken broth
1 lb cheese tortellini
1 cup mozzarella cheese shredded
½ cup heavy cream
2 cups baby spinach
⅓ cup Parmesan cheese grated
Instructions
- Spray the CrockPot with olive oil spray and add the chicken breasts.
- Pour in the marinara sauce, chicken broth, and season with garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes.
- Cover and cook on low for about 4-6 hours or on high for 2-3 hours until the chicken is cooked through.
- Once cooked, shred the chicken using two forks.
- Stir in the cheese tortellini, heavy cream, baby spinach, and mozzarella cheese.
- Cover and cook on high for an additional 30 minutes until tortellini is tender and spinach is wilted.
- Serve hot, garnished with grated Parmesan cheese.
Notes
Feel free to customize the recipe by adding your favorite vegetables. You can also use frozen tortellini if desired.
