2 pounds of boneless, skinless chicken breast
1 can (10.5 oz) of cream of chicken soup
1 can (10.5 oz) of low-sodium chicken broth
1 cup of frozen peas and carrots
1 medium onion, diced
2 cloves of fresh garlic, minced
1 teaspoon of dried thyme
1 teaspoon of dried parsley
Salt and pepper to taste
1 cup of whole milk or heavy cream
2 cups of biscuit dough
Place your chicken breasts in the bottom of the crockpot.
In a separate bowl, mix together the cream of chicken soup and chicken broth until smooth. Pour this over the chicken.
Add the diced onion, garlic, and frozen peas and carrots. Sprinkle over the thyme, parsley, salt, and pepper. Stir gently to combine.
Cover and cook on low for 6 hours or high for about 3 hours. The chicken should be tender.
Once cooked, shred the chicken right in the pot using two forks and mix well.
Stir in the milk or cream to add richness.
If using store-bought biscuit dough, break it into small pieces and drop them on top of the chicken mixture.
Cover and cook on high for an additional 30-45 minutes until the dumplings are fluffy.
