  • 2 pounds of boneless, skinless chicken breast
  • 1 can (10.5 oz) of cream of chicken soup
  • 1 can (10.5 oz) of low-sodium chicken broth
  • 1 cup of frozen peas and carrots
  • 1 medium onion, diced
  • 2 cloves of fresh garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • Salt and pepper to taste
  • 1 cup of whole milk or heavy cream
  • 2 cups of biscuit dough

  • Instructions

  • Place your chicken breasts in the bottom of the crockpot.
  • In a separate bowl, mix together the cream of chicken soup and chicken broth until smooth. Pour this over the chicken.
  • Add the diced onion, garlic, and frozen peas and carrots. Sprinkle over the thyme, parsley, salt, and pepper. Stir gently to combine.
  • Cover and cook on low for 6 hours or high for about 3 hours. The chicken should be tender.
  • Once cooked, shred the chicken right in the pot using two forks and mix well.
  • Stir in the milk or cream to add richness.
  • If using store-bought biscuit dough, break it into small pieces and drop them on top of the chicken mixture.
  • Cover and cook on high for an additional 30-45 minutes until the dumplings are fluffy.
