1 pound of ground chicken
1/2 cup of panko bread crumbs
2 cloves of fresh garlic, minced
1/4 cup of grated Parmesan cheese
1 large egg
1 teaspoon of dried Italian herbs
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 cup of unsalted butter
1 cup of chicken broth
1 cup of orzo pasta
1 cup of heavy cream
Fresh parsley, chopped for garnish
Instructions
In a large bowl, combine the ground chicken, bread crumbs, minced garlic, Parmesan cheese, egg, Italian herbs, salt, and pepper. Use your hands to mix well—but don’t overmix.
Shape the mixture into small meatballs, about one inch in diameter. Set them aside on a plate.
In your crockpot, melt the unsalted butter on the bottom.
Carefully place the meatballs in the crockpot, making sure they are evenly spaced. Pour the chicken broth over the meatballs, covering them halfway.
Cover and cook on low for about 4-5 hours, or on high for about 2-3 hours.
When the meatballs are cooked through, add the orzo to the crockpot. Stir it gently and pour in the heavy cream. Cover and cook for an additional 30 minutes on low.
Once done, give everything a good stir and serve hot, garnished with fresh parsley.
