4 boneless, skinless chicken thighs

3 tablespoons white miso paste
2 tablespoons fresh lemon juice
4 cloves of garlic, minced
1 tablespoon honey or maple syrup
1 pound rainbow carrots, peeled and cut into sticks
1 teaspoon fresh ginger, grated
Salt to taste
Pepper to taste
