4 slices of thick, crusty bread (like sourdough or country bread)
4 slices of good quality ham (thinly sliced Black Forest ham recommended)
1 cup of grated Gruyère cheese (or a mix of Gruyère and Emmental)
2 tablespoons of unsalted butter, softened
1 tablespoon of Dijon mustard
1 tablespoon of all-purpose flour
1 cup of whole milk
Salt and freshly cracked black pepper, to taste
Instructions
In a small saucepan, melt 2 tablespoons of butter over medium heat. Sprinkle in the flour and whisk continuously for about 2 minutes until it’s lightly golden.
Gradually whisk in the milk, stirring constantly to prevent lumps. Continue until the sauce thickens for about 5-7 minutes. Remove from heat, stir in a pinch of salt, pepper, and half of the grated cheese.
Spread Dijon mustard on one side of each slice of bread. Layer ham and remaining cheese on the mustard side of two of the slices.
Place the other two slices of bread on top, mustard side down. Spread the outsides with softened butter.
Grill the sandwiches on medium heat for about 3-4 minutes on each side until golden brown and cheese is melty. Finish in a preheated oven at 400°F (200°C) for an additional 5 minutes if desired.
