Ingredients
For the Chicken:

2 boneless, skinless chicken breasts, cut into bite-sized pieces

½ cup buttermilk

1 cup panko breadcrumbs

½ cup flour

1 tsp paprika

Salt & pepper, to taste

Oil for frying or air frying
For the Hot Honey:

⅓ cup honey
-
1–2 tsp hot sauce (adjust to taste)

¼ tsp red pepper flakes (optional)
For the Salad:

4 cups mixed greens

½ cup shredded carrots
-
½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

Optional: sliced avocado, croutons, or shredded cheese
Instructions

Prep chicken: Soak chicken pieces in buttermilk for 10 minutes. Mix flour, panko, paprika, salt, and pepper in a bowl.

Bread & cook: Coat chicken in the panko mixture. Fry in hot oil until golden and crispy (or air fry at 400°F for 12–15 minutes).

Make hot honey: Heat honey with hot sauce and pepper flakes in a small saucepan until warm. Drizzle over crispy chicken.

Assemble salad: Toss greens, carrots, tomatoes, and onion in a large bowl. Top with hot honey chicken.

Serve: Optionally drizzle with ranch or a creamy dressing of your choice and enjoy warm.
