4 cups of cucumbers, sliced (about 2 medium cucumbers)
6 strips of bacon, cooked and crumbled
1 cup of cherry tomatoes, halved
1 cup of cheddar cheese, shredded (sharp cheddar adds more flavor)
1/2 cup of red onion, thinly sliced
1 cup of ranch dressing (store-bought or homemade)
Salt and pepper, to taste
Fresh herbs (like dill or parsley) for garnish, optional
Wash your cucumbers thoroughly. Optionally peel them, then slice them into thin rounds or half-moons.
In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain and cool before crumbling.
Halve your cherry tomatoes and set them aside.
Thinly slice the red onion. Soak it in cold water for 10 minutes to mellow the flavor if desired.
In a large salad bowl, combine the cucumbers, crumbled bacon, halved cherry tomatoes, shredded cheddar, and red onion.
