1 cup creamy peanut butter

1/2 cup unsalted butter, softened

2 cups powdered sugar

1/3 cup heavy cream (more as needed)

— Chocolate Ganache —

1 cup dark chocolate chips

1/2 cup heavy cream


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Add eggs, buttermilk, oil, and vanilla. Mix until combined.

4. Stir in hot coffee. Batter will be thin.

5. Divide batter between prepared pans and bake for 30–35 minutes. Let cool completely.

6. Make frosting: Beat peanut butter and butter until smooth. Add powdered sugar and cream; beat until fluffy.

7. Make ganache: Heat cream until hot but not boiling. Pour over chocolate chips. Let sit 2 minutes, then stir until smooth.

8. Assemble cake: Spread peanut butter frosting between cake layers and over the top.

9. Pour ganache over top, letting it drip down sides.

10. Chill cake 30 minutes before serving.
