Dark Chocolate Raspberry Pie combines rich dark chocolate ganache with fresh raspberries on a buttery crust, creating a luscious dessert perfect for special occasions.
Ingredients
1 1/2 cups chocolate cookie crumbs
6 tbsp unsalted butter, melted
1 cup heavy cream
8 oz dark chocolate, chopped
2 cups fresh raspberries
2 tbsp sugar
1 tsp vanilla extract
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C).
2. Mix chocolate cookie crumbs with melted butter.
3. Press mixture into a 9-inch pie pan to form crust.
4. Bake crust for 8-10 minutes; cool completely.
5. Heat heavy cream in a saucepan until just simmering.
6. Pour hot cream over chopped dark chocolate; let sit 2 minutes.
7. Stir until smooth ganache forms.
8. Add vanilla extract and pinch of salt; mix well.
9. Pour ganache into cooled crust.
10. Arrange fresh raspberries evenly on top.
11. Chill pie in refrigerator for at least 4 hours before serving.
Notes
Use bittersweet chocolate for less sweetness.
Garnish with whipped cream or mint leaves.
Store leftover pie covered in refrigerator up to 3 days.
