2 ½ cups of all-purpose flour
1 tablespoon of cocoa powder (unsweetened)
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ teaspoon of salt
1 cup of unsalted butter, softened
1 ½ cups of granulated sugar
1 large egg
1 teaspoon of vanilla extract
1 teaspoon of red food coloring (liquid or gel)
8 oz of cream cheese, softened
½ cup of unsalted butter, softened
2 cups of powdered sugar
1 teaspoon of vanilla extract
Instructions
Preheat your oven to 350°F (175°C).
Whisk together in a bowl the flour, cocoa powder, baking powder, baking soda, and salt.
In a separate bowl, cream the butter and sugar together using an electric mixer until light and fluffy.
Add the egg, vanilla extract, and red food coloring to the butter-sugar mixture and mix until combined.
Gradually add the dry ingredients into the wet mixture, mixing until just combined.
Drop teaspoon-sized portions of dough onto a baking sheet lined with parchment paper, spaced about 2 inches apart.
Bake for 10-12 minutes or until the edges are set but the centers still look slightly soft.
Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Make the cream cheese filling by beating the softened cream cheese and butter together until well combined and fluffy, then gradually add powdered sugar and vanilla extract.
Once the cookies are cooled, spread or pipe cream cheese filling on the flat side of one cookie and top with another cookie to create a sandwich.
