1 cup (226g) unsalted butter
2 cups (400g) granulated sugar
1 cup (200g) packed light brown sugar
4 large eggs
1 tablespoon pure vanilla extract
1 cup (120g) all-purpose flour
1 cup (100g) unsweetened cocoa powder
1 teaspoon salt
1 cup (150g) fresh raspberries
Optional: powdered sugar for dusting on top
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
In a medium saucepan, melt the butter over low heat. Stir until completely liquefied and remove from heat.
Stir in both the granulated and brown sugars until well combined.
Allow the mixture to cool slightly, then add the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add this to the wet ingredients, stirring gently until just combined.
Gently fold in the raspberries, taking care to leave some whole.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake for 25-30 minutes. The edges should be firm, and a toothpick inserted into the center should come out with a few moist crumbs.
Allow the brownies to cool completely in the pan before slicing into squares.
