Ingredients

2 cups of fresh or frozen cherries (pitted and halved)
¾ cup of granulated sugar
1 tablespoon of cornstarch
1 teaspoon of vanilla extract
1 tablespoon of lemon juice
1 package of refrigerated pie crusts (2 crusts)
1 egg (for egg wash)
A pinch of salt
Powdered sugar (for dusting, optional)
Instructions
Preheat your oven to 375°F (190°C).
In a saucepan, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice over medium heat. Stir until it starts to bubble, then let it simmer for 5-7 minutes until slightly thickened. Remove from heat and cool.
Roll out the pie crusts on a floured surface or unroll them and cut into squares.
Place each square into a greased muffin tin. Spoon about a tablespoon of the cherry filling into each crust, making sure not to overfill.
Fold corners of the crust or use another square of crust over them. Seal the edges by pinching or crimping with a fork.
Whisk the egg with water and brush over the tops of the pie bites.
Bake for 20-25 minutes until the crust is golden brown and flaky.
Cool for a few minutes, dust with powdered sugar, and enjoy!
