1 lb (450g) Velveeta cheese, cubed
1 can (15 oz) diced tomatoes with green chilies
1 lb (450g) ground beef or sausage, cooked and crumbled
1 cup (240ml) shredded cheddar cheese
1/2 cup (120ml) cream cheese
1/2 onion, diced
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
Start by cooking your ground beef or sausage in a skillet over medium heat until it's browned. Drain any excess fat.
While the meat is cooking, dice your onion and mince your garlic.
In your crock pot, add the cubed Velveeta, cooked meat, diced tomatoes (with juice!), shredded cheddar, cream cheese, diced onion, minced garlic, chili powder, smoked paprika, and a pinch of salt and pepper.
Give everything a gentle stir to combine. Cover and set your crock pot on low for about 2 hours, or until the cheeses have melted and everything is bubbly.
After 2 hours, give it a good stir. If it's too thick, you can add a splash of milk or more diced tomatoes to reach your desired consistency.
Spoon the warm and melty queso dip into a serving bowl, and garnish with some chopped cilantro or green onions if desired.
