For the Crust:

  • 200g chocolate cookie crumbs

  • 75g melted butter

For the Filling:

  • 500g cream cheese, softened

  • 150g sugar

  • 2 tbsp all-purpose flour

  • 2 large eggs

  • 100ml sour cream

  • 2 tbsp instant espresso powder (dissolved in 1 tbsp hot water)

  • 1 tsp vanilla extract

For the Topping (Optional):

  • Whipped cream

  • Cocoa powder or chocolate shavings


Instructions

  1. Make the Crust: Mix crumbs with butter, press into a springform pan. Bake at 170°C (340°F) for 10 minutes.

  2. Prepare Filling: Beat cream cheese, sugar, and flour. Add eggs one at a time, then sour cream, espresso, and vanilla.

  3. Bake: Pour over crust, bake at 160°C (320°F) for 45–50 mins. Cool gradually, then chill for at least 4 hours or overnight.

  4. Top & Serve: Garnish with whipped cream and a dusting of cocoa or chocolate shavings before serving.

Notes

  • Use good-quality espresso powder for the richest flavor.

  • Avoid overmixing to prevent cracks.
