1 cup cold sparkling water
2 large russet potatoes, peeled and cut into thick wedges

Vegetable oil for frying
1/2 cup mayonnaise
2 tablespoons dill pickles, finely chopped
1 tablespoon capers, finely chopped (optional)
1 teaspoon Dijon mustard
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
Start by soaking the cut potato wedges in cold water for at least 30 minutes.
While the potatoes are soaking, gather your ingredients for the tartar sauce and combine mayonnaise, dill pickles, capers, Dijon mustard, lemon juice, salt, and pepper in a bowl. Mix until blended and refrigerate.
In a mixing bowl, whisk together 1 cup of flour and 1 teaspoon baking powder. Gradually add in the cold sparkling water until you achieve a smooth batter.
Pat the fish fillets dry with paper towels and lightly dust them with some flour.
Heat vegetable oil in a heavy-bottomed pot to around 350°F (175°C).
Add the soaked potato wedges to the hot oil and fry for about 5-7 minutes until golden and crispy. Drain and season with salt.
Dip each fish fillet into the batter and gently lower it into the hot oil. Fry for about 4-5 minutes until golden brown and crispy. Drain on paper towels.
