  • 1 tablespoon capers, finely chopped (optional)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

  • Instructions

  • Start by soaking the cut potato wedges in cold water for at least 30 minutes.
  • While the potatoes are soaking, gather your ingredients for the tartar sauce and combine mayonnaise, dill pickles, capers, Dijon mustard, lemon juice, salt, and pepper in a bowl. Mix until blended and refrigerate.
  • In a mixing bowl, whisk together 1 cup of flour and 1 teaspoon baking powder. Gradually add in the cold sparkling water until you achieve a smooth batter.
