4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1 cup low-sodium chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 large onion, chopped
1 bell pepper, chopped
1 cup carrots, sliced
Instructions
Pat your chicken dry with paper towels and rub with olive oil. Season with salt, pepper, garlic powder, paprika, and thyme.
If desired, brown the chicken in a skillet over medium heat for 3-4 minutes on each side until golden brown.
Layer chopped onions and bell peppers in the slow cooker, add browned chicken on top, and pour in diced tomatoes and chicken broth. If using, add carrots last.
Put the lid on the slow cooker, set to low, and let it cook for 6-8 hours or on high for 3-4 hours.
Check if the chicken is tender, and serve. For a thicker sauce, remove some liquid and simmer until reduced.
