8 large eggs
½ cup of milk
1 cup of shredded cheese
½ cup of diced bell peppers
½ cup of diced onions
8 slices of cooked bacon or sausage patties
8 sandwich English muffins
Salt and pepper to taste
Butter or cooking spray
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk the eggs and milk together until well combined. Add a pinch of salt and pepper for seasoning.
In a skillet over medium heat, melt a bit of butter or spray with cooking oil. Add the diced bell peppers and onions and sauté until softened, about 4-5 minutes.
Stir the sautéed veggies into the egg mixture and fold in the shredded cheese.
Pour the egg mixture into a greased 9×13-inch baking dish. Bake for about 20-25 minutes, until the center is set.
Allow the egg bake to cool for a few minutes, then slice it into squares that fit your English muffins.
Place a slice of the egg mixture on the bottom half of each English muffin. Top with bacon or sausage and cover with the muffin top.
