3 green plantains, peeled and cut into chunks
3–4 cloves of fresh garlic
1 teaspoon of salt
1 cup of chicken broth
1/4 cup of olive oil
Optional: Pork cracklings (chicharrón) for added texture
1 pound of large shrimp, peeled and deveined
4 cloves of garlic, minced
1/2 teaspoon of red pepper flakes
2 tablespoons of olive oil
1 tablespoon of fresh parsley, chopped
Salt and pepper to taste
Instructions
Heat a large skillet over medium heat. Add enough olive oil to cover the bottom of the pan. Once hot, add the plantain chunks and fry them for about 4-5 minutes on each side, until they turn golden brown.
Once the plantains are done, remove them from the skillet and place them on a paper towel to drain. In a mortar and pestle, mash the plantains together with garlic, salt, and gradually add chicken broth until it reaches a sticky but smooth consistency.
Transfer the mofongo to a serving dish, shaping it into a mound or using a bowl to mold it. Keep it warm while you prepare the shrimp.
In the same skillet, add more olive oil if needed. Once hot, toss in the minced garlic and red pepper flakes. Stir everything for about 30 seconds.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 3-4 minutes until they turn pink and opaque.
Once the shrimp are cooked through, sprinkle fresh parsley on top and mix well. You’re ready to serve!
