  • 3 green plantains, peeled and cut into chunks
  • 34 cloves of fresh garlic
  • 1 teaspoon of salt
  • 1 cup of chicken broth
  • 1/4 cup of olive oil
  • Optional: Pork cracklings (chicharrón) for added texture
  • 1 pound of large shrimp, peeled and deveined
  • 4 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh parsley, chopped
  • Salt and pepper to taste

  • Instructions

  • Heat a large skillet over medium heat. Add enough olive oil to cover the bottom of the pan. Once hot, add the plantain chunks and fry them for about 4-5 minutes on each side, until they turn golden brown.
  • Once the plantains are done, remove them from the skillet and place them on a paper towel to drain. In a mortar and pestle, mash the plantains together with garlic, salt, and gradually add chicken broth until it reaches a sticky but smooth consistency.
  • Transfer the mofongo to a serving dish, shaping it into a mound or using a bowl to mold it. Keep it warm while you prepare the shrimp.
  • In the same skillet, add more olive oil if needed. Once hot, toss in the minced garlic and red pepper flakes. Stir everything for about 30 seconds.
  • Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 3-4 minutes until they turn pink and opaque.
  • Once the shrimp are cooked through, sprinkle fresh parsley on top and mix well. You’re ready to serve!
