Description
A comforting Korean dish that combines savory, sweet, and spicy flavors in a quick and easy bowl meal.
Ingredients
1 lb ground beef (preferably 80/20 for a good fat balance), 1/4 cup soy sauce, 2 tablespoons Gochujang (Korean chili paste), 2 tablespoons brown sugar, 1 tablespoon sesame oil, 4 cloves garlic, minced, 1-inch ginger, grated, 1 cup green onions, sliced (both white and green parts), 1 cup broccoli florets (steamed), 1 cup cooked rice (white or brown according to preference), Sesame seeds for garnish (optional), Fresh cilantro for garnish (optional)
Instructions
Cook the Rice: Begin by cooking your rice according to the package instructions. If using a rice cooker, rinse the rice, add water, and set it aside while you prepare the rest of the dish., Chop Vegetables: Mince the garlic and grate the ginger. Slice the green onions, ensuring that you separate the white parts from the green tops., Steam the Broccoli: If you don’t have pre-steamed broccoli, steam it until it’s tender but still bright green, which should take around 3-5 minutes., Heat the Skillet: Place your skillet over medium-high heat and add the sesame oil. Allow it to heat up for about a minute., Cook the Aromatics: Add the minced garlic and grated ginger to the pan. Stir for about 30 seconds until fragrant — be careful not to burn them!, Brown the Beef: Next, add the ground beef to the skillet. Break it apart with your spatula and cook until browned. This should take around 5-7 minutes. Drain any excess fat if necessary, but a bit of fat helps to keep the dish moist., Incorporate the Sauce: In a bowl, mix the soy sauce, Gochujang, and brown sugar until combined. Pour this mixture over the cooked ground beef. Stir well to ensure the beef is evenly coated in the sauce. Let it cook for an additional 2-3 minutes, allowing the flavors to meld., Add the Vegetables: Add the steamed broccoli and white parts of the green onions to the skillet. Stir everything together and let it simmer for another minute or two., Taste and Adjust: At this point, taste the mixture. If you like it spicier, feel free to add a bit more Gochujang. Adjust sweetness or salt according to your preference., Plate the Rice: Take your cooked rice and divide it amongst serving bowls. Top each bowl with the Korean ground beef mixture., Garnish: Finish with sliced green onion tops, sesame seeds, and fresh cilantro sprigs if you wish.
Notes
For a vegetarian option, substitute ground beef with tofu or plant-based alternatives. Adjust the spice level according to your taste.
