2 tablespoons of granulated sugar
1 large egg yolk
2 to 4 tablespoons of cold water
3 large eggs
1 cup of whole milk
½ cup of granulated sugar
1 tablespoon of matcha powder
1 teaspoon of pure vanilla extract
Fresh fruit such as strawberries or raspberries (for topping)
Whipped cream or whipped coconut cream (for topping)
Powdered sugar for dusting (optional)
Instructions
Make the tart crust: In a large bowl, mix the flour and sugar. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
Add the egg yolk: Gently mix in the egg yolk and 2 tablespoons of cold water. Add more water if needed until it comes together.
Chill the dough: Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven: Preheat your oven to 375°F (190°C).
Roll out the dough: On a floured surface, roll the dough to fit your tart pan, then place it in the pan and trim excess.
Blind bake the crust: Line with parchment and fill with weights. Bake for about 15 minutes or until lightly golden, then remove weights and bake for 5 more minutes.
Prepare the custard filling: Whisk eggs, sugar, milk, matcha, and vanilla until combined. Strain through a sieve.
Fill the crust: Pour the custard filling into the baked crust.
Bake the tart: Bake for 25-30 minutes until the custard is set but slightly jiggly in the center.
Cool and serve: Let the tart cool before transferring to a wire rack. Chill completely before serving.
