Ingredients

Scale
  • 1 ½ cups of all-purpose flour (plus extra for dusting)
  • ½ cup of unsalted butter, cold and cubed
  • 2 tablespoons of granulated sugar
  • 1 large egg yolk
  • 2 to 4 tablespoons of cold water
  • 3 large eggs
  • 1 cup of whole milk
  • ½ cup of granulated sugar
  • 1 tablespoon of matcha powder
  • 1 teaspoon of pure vanilla extract
  • Fresh fruit such as strawberries or raspberries (for topping)
  • Whipped cream or whipped coconut cream (for topping)
  • Powdered sugar for dusting (optional)

  • Instructions

  • Make the tart crust: In a large bowl, mix the flour and sugar. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
  • Add the egg yolk: Gently mix in the egg yolk and 2 tablespoons of cold water. Add more water if needed until it comes together.
  • Chill the dough: Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven: Preheat your oven to 375°F (190°C).
  • Roll out the dough: On a floured surface, roll the dough to fit your tart pan, then place it in the pan and trim excess.
  • Blind bake the crust: Line with parchment and fill with weights. Bake for about 15 minutes or until lightly golden, then remove weights and bake for 5 more minutes.
  • Prepare the custard filling: Whisk eggs, sugar, milk, matcha, and vanilla until combined. Strain through a sieve.
  • Fill the crust: Pour the custard filling into the baked crust.
  • Bake the tart: Bake for 25-30 minutes until the custard is set but slightly jiggly in the center.
  • Cool and serve: Let the tart cool before transferring to a wire rack. Chill completely before serving.
  • Notes

A twist on the classic custard tart, this matcha egg custard tart combines creamy flavors with the earthy richness of matcha, making it perfect for special occasions or a delightful treat.
