1 sheet of puff pastry (thawed if frozen)
1/2 cup shelled pistachios, finely chopped
1/2 cup orange marmalade
1 tablespoon fresh orange zest (about 1 orange)
1 egg (for egg wash)
2 tablespoons sugar (for sprinkling)
Pinch of salt
Preheat your oven to 400°F (200°C).
On a lightly floured surface, roll out the puff pastry into a large rectangle, about 1/8-inch thick.
Cut the pastry into equal squares—about 4×4 inches.
In a bowl, mix the chopped pistachios, orange marmalade, and fresh orange zest until well combined.
Place a spoonful of the pistachio-orange mixture in the center of each square.
Fold each square in half to create a triangle or fold in the edges to form a rectangle. Press the edges firmly to seal.
Beat the egg and brush a thin layer over the top of each pastry.
Dust a touch of sugar over each pastry.
Place the pastries on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until they’re puffy and golden brown.
Let them cool for a few minutes before serving.
