Ingredients
For the Roasted Carrots:

Instructions

Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, pepper, and cumin.

Spread on a baking sheet and roast for 25–30 minutes until tender and slightly caramelized.

Meanwhile, whip ricotta with olive oil, lemon zest, and salt using a food processor or hand mixer until smooth.

In a small saucepan, warm honey and red pepper flakes over low heat for 2–3 minutes (do not boil). Stir in vinegar if using.
