1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon olive oil
1 red bell pepper, sliced
1 cup broccoli florets
1 cup jasmine rice
1 can coconut milk
Juice and zest of 1 lime
Fresh cilantro, chopped
Salt and pepper, to taste
Instructions
Cook the jasmine rice according to the package instructions.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning lightly with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
Add the sliced bell pepper and broccoli. Sauté for another 3-4 minutes until tender but still vibrant.
