2 tablespoons of olive oil
2 large onions, finely chopped
1 bulb of garlic, cloves separated and peeled
4 cups of vegetable broth
3 medium potatoes, peeled and diced
1 cup of heavy cream
1 teaspoon of thyme
Salt and pepper to taste
Chopped chives or parsley for garnish
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onions and cook for about 5-7 minutes until soft and translucent.
Add the peeled garlic cloves and sauté for another 3-4 minutes until fragrant and slightly golden.
