1 can (20 oz) crushed pineapple

juice included

1/2 cup vegetable oil

3 large eggs

1 box angel food cake mix

2/3 cup whole milk

1 box (3.4 oz) pistachio instant pudding mix

1 tub (8 oz) whipped topping

thawed

Chopped pistachios to sprinkle on top


Instructions

  • Preheat the oven as per the angel food cake mix instructions.
  • In a large mixing bowl, combine the pistachio pudding mix, crushed pineapple with juice, vegetable oil, and eggs. Mix until well combined.
  • Gently fold in the angel food cake mix until no streaks remain.
  • Pour the batter into a greased cake pan and bake according to the angel food cake mix instructions, or until a toothpick inserted into the center comes out clean.
  • While the cake cools, prepare the frosting by whisking together the whole milk and pistachio pudding mix until thickened. Fold in the thawed whipped topping until smooth.
  • Once the cake is completely cooled, spread the pistachio frosting on top and sprinkle with chopped pistachios.
