For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • ½ cup dulce de leche (plus extra for drizzling)


Instructions

  • Preheat oven to 325°F (160°C). Line an 8×8-inch pan with parchment paper.

  • Mix graham cracker crumbs, sugar, and melted butter. Press into the pan to form a crust. Bake for 10 minutes.

  • In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.

  • Pour the mixture over the crust. Drop spoonfuls of dulce de leche on top and gently swirl with a knife.

  • Bake for 35–40 minutes until center is set. Cool completely, then refrigerate at least 3 hours.

  • Slice into bars and drizzle with extra dulce de leche before serving.

Notes

  • For easier cutting, chill overnight and use a hot knife.

  • You can substitute dulce de leche with thick caramel sauce if desired.

  • Bars can be frozen for up to 2 months—just thaw before serving.
