  • 1 medium onion, chopped

  • 2 stalks of celery, diced

  • 2 cups of fresh spinach
  • 2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1/2 cup of milk
  • 1 large egg
  • 2 tablespoons of melted butter

  • Instructions

  • In a large pot, heat a splash of olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-5 minutes until softened and translucent.
  • Toss in the minced garlic, sliced carrots, and diced celery. Stir them around for another 5 minutes.
  • Carefully add your chicken broth. Bring everything to a gentle simmer and season with thyme, salt, and pepper.
  • In a bowl, whisk together the flour, baking powder, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry mixture and stir just until combined.
  • Once your soup is simmering, drop spoonfuls of the dumpling batter right into the bubbling broth.
  • Cover the pot and allow the dumplings to steam in the soup for about 10-15 minutes without lifting the lid.
  • Once the dumplings are cooked through, stir in the fresh spinach and cook for another 2 minutes until wilted. Adjust seasoning if needed.
