6 cups of chicken broth
1 medium onion, chopped
2 cloves of fresh garlic, minced
3 medium carrots, sliced
2 stalks of celery, diced
1 teaspoon of dried thyme

2 cups of fresh spinach
2 cups of all-purpose flour
2 teaspoons of baking powder
1 teaspoon of salt
1/2 cup of milk
1 large egg
2 tablespoons of melted butter
Instructions
In a large pot, heat a splash of olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-5 minutes until softened and translucent.
Toss in the minced garlic, sliced carrots, and diced celery. Stir them around for another 5 minutes.
Carefully add your chicken broth. Bring everything to a gentle simmer and season with thyme, salt, and pepper.
