6 oz (170g) high-quality dark chocolate (around 60–70% cocoa), chopped
Instructions

Melt the chocolate: In a heatproof bowl, melt the chocolate using a double boiler or microwave in short intervals. Stir until smooth, then let cool slightly.

Whip the cream: In a separate bowl, beat the cold cream until soft peaks form.

Fold gently: Add a spoonful of whipped cream into the melted chocolate and stir to loosen. Gently fold in the rest of the cream in batches until fully combined and smooth.

Chill: Spoon into serving glasses or bowls and refrigerate for at least 1 hour to set. Serve chilled.
