1 pound of fresh asparagus, trimmed and cut into 1-inch pieces
1 medium onion, chopped
2 cloves of garlic, minced
2 tablespoons of olive oil or unsalted butter
4 cups of vegetable or chicken broth
1 cup of heavy cream
Salt and pepper to taste
1 tablespoon of lemon juice
Optional garnish: croutons, a drizzle of olive oil, or fresh herbs
In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent and fragrant, about 5 minutes.
Add the minced garlic and asparagus pieces. Sauté for another 3-4 minutes.
Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer for about 10 minutes.
Take the pot off the heat and let it cool slightly. Blend until smooth and creamy.
Return the soup to the pot over low heat. Stir in the heavy cream and lemon juice, seasoning with salt and pepper to taste.
Serve warm, garnished with optional croutons or a drizzle of olive oil.
