1 pound dried black-eyed peas or two cans (drained and rinsed)
12 ounces Andouille sausage, sliced
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, diced
2 stalks celery, diced
4 cups low-sodium chicken broth or vegetable broth
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
Salt and pepper to taste
2 tablespoons olive oil
Optional: Chopped green onions and hot sauce for serving
Instructions
If using dried black-eyed peas, sort and soak them overnight.
In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for 5-7 minutes until softened.
Stir in minced garlic, smoked paprika, and cayenne pepper and cook for an additional minute.
Add sliced Andouille sausage and allow to brown for about 5 minutes.
Pour in chicken broth and add the soaked or canned black-eyed peas. Bring to a boil; reduce heat and simmer uncovered for approx. 30-40 minutes for dried peas or 10-15 minutes for canned peas.
Season with salt and pepper to taste. Let rest for a few minutes before serving.
