  • 12 ounces Andouille sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth or vegetable broth
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Chopped green onions and hot sauce for serving

  • Instructions

  • If using dried black-eyed peas, sort and soak them overnight.
  • In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for 5-7 minutes until softened.
  • Stir in minced garlic, smoked paprika, and cayenne pepper and cook for an additional minute.
  • Add sliced Andouille sausage and allow to brown for about 5 minutes.
  • Pour in chicken broth and add the soaked or canned black-eyed peas. Bring to a boil; reduce heat and simmer uncovered for approx. 30-40 minutes for dried peas or 10-15 minutes for canned peas.
  • Season with salt and pepper to taste. Let rest for a few minutes before serving.
