1–2 tablespoons bourbon (optional)
1 sheet frozen puff pastry
thawed
1 egg
beaten
coarse sugar
for sprinkling

Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine honey, cherries, blueberries, cornstarch, vanilla extract, and bourbon if using. Mix well and set aside.
- On a parchment-lined baking sheet, roll out the thawed puff pastry to your desired thickness.
- Spoon the fruit mixture onto the center of the pastry, leaving a 2-inch border around the edges.
- Fold the edges of the pastry over the fruit filling, pleating as necessary to create a rustic galette shape.
- Brush the pastry edges with the beaten egg and sprinkle with coarse sugar.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Allow the galette to cool slightly before serving with a scoop of vanilla ice cream.
