1 ½ cups of all-purpose flour
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
½ cup of unsalted butter, softened
1 cup of brown sugar, packed
2 large eggs
1 teaspoon of vanilla extract
½ cup of buttermilk
2 cups of fresh peaches, peeled and diced
1 teaspoon of ground cinnamon (optional)
Powdered sugar for dusting (optional)
Preheat your oven to 350°F (175°C).
Grease and flour a 9-inch round cake pan or use parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
In a large mixing bowl, cream together the softened butter and brown sugar using an electric mixer for about 2-3 minutes until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract until well mixed.
Alternately add the dry flour mixture and buttermilk to the butter mixture, starting and ending with flour. Mix just until incorporated.
Gently fold in the diced peaches.
Pour the batter into the prepared cake pan and spread it evenly. Top with reserved peach pieces if desired.
Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
