Description

These Easy Cheesy Ground Beef Enchiladas are a delicious and satisfying meal perfect for busy weeknights. Filled with savory ground beef, beans, corn, and lots of melted cheese, they’re guaranteed to please the entire family!


Ingredients

1 lb (450g) ground beef

1 small onion

finely chopped

2 cloves garlic

minced

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans

drained and rinsed (optional)

1 cup corn kernels (fresh

frozen

or canned)

2 cups shredded cheddar cheese (or Mexican blend cheese)

8 flour tortillas (8-inch)

2 tbsp olive oil

1 tsp chili powder

1/2 tsp ground cumin

Salt and pepper

to taste

Fresh cilantro (optional)

Sour cream (optional)


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the red enchilada sauce, black beans (if using), corn, chili powder, cumin, salt, and pepper. Cook for another 5 minutes until heated through.
  • Remove from heat and add 1 cup of cheddar cheese to the beef mixture, stirring until well combined.
  • To assemble, place a generous scoop of the beef mixture into each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  • Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  • Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Garnish with fresh cilantro and serve with sour cream if desired.

Notes

Feel free to customize the filling with your favorite ingredients. You can also use corn tortillas for a gluten-free version.
