2 cups of fresh or frozen cherries, pitted
1 cup of granulated sugar
2 tablespoons of cornstarch
1 teaspoon of vanilla extract
1 tablespoon of lemon juice
1 cup of all-purpose flour
1 tablespoon of baking powder
½ teaspoon of salt
1 cup of milk
2 tablespoons of melted butter
Optional: Whipped cream or vanilla ice cream for serving
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the cherries, ½ cup sugar, cornstarch, vanilla extract, and lemon juice. Toss until well-coated and let sit to become juicy.
In another large bowl, mix together flour, baking powder, salt, and remaining ½ cup sugar.
Add the milk and melted butter to the dry ingredients and mix until just combined, being careful not to overmix.
Pour the cherry mixture into a greased 9×13-inch baking dish and spoon the batter over the filling, allowing cherries to peek through.
Bake in the preheated oven for 30-35 minutes until golden brown and a toothpick inserted comes out clean.
Allow to cool for a few minutes before serving.
