Ingredients
Scale
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup chopped carrots
1 cup frozen peas
1 cup corn, frozen or canned, drained
1 cup chicken broth, preferably low sodium
1 tablespoon olive oil
1/2 onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
2 cans refrigerated biscuit dough
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and the onions are translucent, about 3-4 minutes.
Add the bite-sized chicken pieces to the skillet and cook until no longer pink, about 5-7 minutes. Sprinkle in the thyme, paprika, salt, and pepper.
Mix in the chopped carrots, frozen peas, and corn. Pour in the chicken broth and gently simmer for a couple of minutes.
Open the cans of biscuit dough and cut each biscuit into quarters. Sprinkle the biscuit pieces over the chicken mixture.
Bake in the preheated oven for about 25-30 minutes, or until the biscuits are golden brown and flaky.
Allow to cool for 5 minutes before serving.
