  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups breadcrumbs (preferably panko)
  • Vegetable oil for frying

  • Instructions

  • Mix softened butter, parsley, garlic, lemon juice, salt, and pepper in a bowl until smooth.
  • Shape the butter into a log and freeze for at least 30 minutes.
  • Pound chicken breasts to an even thickness of 1/2 inch.
  • Fill each chicken breast with a piece of firm butter and roll tightly, securing with toothpicks.
  • Dredge each roll in flour, then dip in beaten eggs, and roll in breadcrumbs.
  • Heat oil in a skillet and fry chicken rolls for about 4-5 minutes on each side until golden.
  • Check the internal temperature reached 165°F (75°C) using a thermometer.
