4 boneless, skinless chicken breasts
1/2 cup unsalted butter, softened
1/4 cup fresh parsley, finely chopped
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs (preferably panko)
Vegetable oil for frying
Mix softened butter, parsley, garlic, lemon juice, salt, and pepper in a bowl until smooth.
Shape the butter into a log and freeze for at least 30 minutes.
Pound chicken breasts to an even thickness of 1/2 inch.
