Ingredients
3 tablespoons low sodium soy sauce or Tamari sauce
2 teaspoons cornstarch
1 tablespoon light brown sugar
1 teaspoon sesame oil
¾ cup low sodium chicken broth
10 to 12 ounces boneless skinless chicken breast thinly cut into strips or cut into about 1.5-inch cubes
2 tablespoons vegetable oil
3 cloves garlic minced
½ teaspoon grated fresh ginger
1 small yellow onion thinly sliced
1 large carrot thinly sliced into coins
1 small red bell pepper thinly sliced into strips
4 ounces sliced button mushrooms
green onion for garnish
toasted sesame seeds for garnish
red pepper flakes for garnish
Instructions
- In a medium bowl, whisk together soy sauce, cornstarch, brown sugar, sesame oil, and chicken broth to make the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for a minute until fragrant.
- Add the chicken to the skillet; cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Add onion, carrot, red bell pepper, and mushrooms to the skillet; stir-fry for about 5 minutes or until vegetables are tender.
- Return the cooked chicken to the skillet. Pour in the sauce and stir until everything is well coated and the sauce has thickened, about 2-3 minutes.
- Serve hot, garnished with green onions, toasted sesame seeds, and red pepper flakes if desired.
