  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, sliced green onions, or cilantro

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they're soft and fragrant.
  • Add the minced garlic and sauté for another minute, being careful not to burn it.
  • Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spoon.
  • Sprinkle the chili powder, ground cumin, smoked paprika, salt, and pepper over the meat and veggies. Stir well.
  • Add the kidney beans, black beans, and diced tomatoes to the pot. Stir and bring to a gentle boil.
  • Reduce heat to low and let simmer for about 20-30 minutes to allow flavors to mingle.
  • Serve in bowls with your favorite toppings.
