1 lb ground beef
1 tablespoon olive oil
1 medium onion, diced
3 cloves of garlic, minced
1 bell pepper, diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, sliced green onions, or cilantro
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they're soft and fragrant.
Add the minced garlic and sauté for another minute, being careful not to burn it.
Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spoon.
Sprinkle the chili powder, ground cumin, smoked paprika, salt, and pepper over the meat and veggies. Stir well.
Add the kidney beans, black beans, and diced tomatoes to the pot. Stir and bring to a gentle boil.
Reduce heat to low and let simmer for about 20-30 minutes to allow flavors to mingle.
Serve in bowls with your favorite toppings.
