Ingredients

Scale
  • 1 lb ground beef

  • 1 small onion, chopped

  • 1 (15 oz) can kidney or pinto beans, drained

  • 1 (15 oz) can corn, drained

  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)

  • 1 packet taco seasoning

  • 1 cup shredded cheddar cheese

  • 1 box (8.5 oz) cornbread mix (e.g., Jiffy)

  • 1/3 cup milk

  • 1 egg

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cook beef: In a skillet, brown ground beef with onion. Drain excess fat.

  3. Add beans, corn, tomatoes, and seasoning. Simmer 5 minutes.

  4. Pour into greased 9×13” dish and top with shredded cheese.

  5. Prepare cornbread mix with milk and egg, then spread over beef mixture.

  6. Bake 25–30 minutes until golden and set.

Notes

  • Add jalapeños or hot sauce for a spicy kick.
