Ingredients
- 1 ½ lbs baby potatoes, halved or quartered
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ½ cup heavy cream
- ¼ cup chicken broth (or vegetable broth)
- 1 tbsp Dijon mustard (optional for extra flavor)
- 1 tbsp butter
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- ½ cup grated Parmesan cheese (optional for extra creaminess)
Instructions
1️⃣ Prepare the Potatoes: Wash and halve or quarter the baby potatoes, depending on their size.
2️⃣ Cook the Potatoes: In a large skillet, heat olive oil over medium heat. Add the potatoes and cook for 10-12 minutes, turning occasionally, until they are golden brown and tender. Remove from the skillet and set aside.
3️⃣ Make the Creamy Garlic Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the heavy cream, chicken broth, and Dijon mustard (if using). Bring to a simmer and cook for 3-4 minutes, until the sauce thickens slightly.
4️⃣ Combine the Potatoes and Sauce: Return the cooked potatoes to the skillet and toss them in the creamy garlic sauce. Cook for another 3-5 minutes, until the potatoes are coated and heated through.
5️⃣ Garnish & Serve: Season with salt and pepper to taste. Sprinkle with fresh parsley and Parmesan cheese (if using), then serve hot.
