1 lb of Italian sausage
1 medium onion, diced
3 cloves of garlic, minced
1 can (15 oz) of crushed tomatoes
2 cups of chicken or vegetable broth
2 cups of uncooked pasta (preferably ditalini or shells)
1 cup of ricotta cheese
1 cup of shredded mozzarella cheese
1/2 cup of grated Parmesan cheese
1 tablespoon of dried Italian herbs (oregano and basil)
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions
In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned (about 5-7 minutes). Drain excess fat if necessary.
Add the diced onion and garlic; sauté until the onion is translucent and the garlic is fragrant (about 3-4 minutes).
Stir in the crushed tomatoes, broth, and Italian herbs; simmer for about 5 minutes.
Add the uncooked pasta; simmer for an additional 8-10 minutes until the pasta is tender.
Stir in the ricotta cheese until melted and creamy. Mix in half of the mozzarella and all of the Parmesan cheese.
Add salt and pepper to taste and adjust the consistency with more broth or water if desired.
Ladle the soup into bowls, sprinkle with remaining mozzarella on top, and garnish with fresh basil.
