2 cups of heavy cream
1 cup of vanilla sugar
5 large egg yolks
1 teaspoon of vanilla extract
Pinch of salt
Extra granulated sugar for caramelizing
Instructions
Preheat your oven to 325°F (160°C).
In a medium saucepan over medium heat, combine the heavy cream and vanilla sugar. Stir occasionally until the sugar dissolves and the mixture starts to steam.
Whisk the egg yolks in a bowl until they are pale and slightly thickened.
Slowly pour the steaming cream into the egg yolks while whisking constantly (tempering).
Add a pinch of salt and the vanilla extract, whisk until combined.
Strain the mixture through a fine-mesh sieve into a large measuring jug or bowl.
Pour the mixture evenly into ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
Bake for 30-35 minutes until the edges are set, but the center still jiggles slightly.
Once baked, let them cool to room temperature then refrigerate for at least 2 hours.
Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch.
