Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with a paper towel.
In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, Italian seasoning, salt, and pepper. Rub this mixture all over the chicken breasts.
In a large mixing bowl, toss the halved baby potatoes with the remaining olive oil, a pinch of salt, and pepper.
Arrange the chicken breasts on one side of a large baking sheet and the potatoes on the other.
Sprinkle the grated Parmesan cheese generously over the chicken breasts and potatoes.
Pop the sheet into the preheated oven and let it cook for about 25-30 minutes.
Once done, sprinkle some freshly chopped parsley over everything for garnish.
