  • 1 pound baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves of fresh garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning or herbs de Provence
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken breasts dry with a paper towel.
  • In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, Italian seasoning, salt, and pepper. Rub this mixture all over the chicken breasts.
  • In a large mixing bowl, toss the halved baby potatoes with the remaining olive oil, a pinch of salt, and pepper.
  • Arrange the chicken breasts on one side of a large baking sheet and the potatoes on the other.
